Fava beans “a ribisàri “

Ingredients for 4 people:

  • 500 g of dried favas
  • Extra virgin olive oil
  • 2 garlic wedges
  • Fresh, chopped parsely
  • Red pepper
  • Salt to taste


  • Rinse off and put the fava beans in a basin filled with lukewarm water. Let them sit for one night. Wash the fava beans and put them in a large pot with salted water, warm them until they are properly cooked. Fava beans must be soft, but not overdone. Conserve in a glass of cooking water.
  • In a terrine, prepare the fava bean condiments, pouring large amounts of extra virgin oil, parsley and diced garlic with a good deal of red pepper. Add some cooking water to the condiment and pour the beans into the terrine, all the while carefully mixing. Let it sit at room temperature for two hours so that it takes on flavor.
